Ingredients

- 2 medium Zucchini, grated
- 1 cup Almond flour
- 2 large Eggs
- 1 teaspoon Baking powder
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- ½ teaspoon Salt
- Everything bagel seasoning, to taste
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Grate the zucchinis using a box grater and squeeze out excess moisture using a kitchen towel.
- Whisk together the eggs in a large mixing bowl until fluffy, then stir in the grated zucchini.
- Mix the almond flour, baking powder, garlic powder, onion powder, and salt in a separate bowl.
- Combine the dry ingredients into the wet mixture gradually, stirring gently until combined.
- Shape the dough into bagel shapes by rolling into balls and poking a hole in the center.
- Sprinkle the tops of the bagels with Everything Bagel seasoning.
- Bake for about 20-25 minutes, or until golden brown.
- Cool on a wire rack before slicing and serving.
Notes
Make sure to squeeze out as much moisture from the zucchini as possible to prevent soggy bagels.
