Description

A delicious and healthy twist on traditional bagels made with nutrient-packed zucchini.


Ingredients

  • 2 medium Zucchini, grated
  • 1 cup Almond flour
  • 2 large Eggs
  • 1 teaspoon Baking powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • ½ teaspoon Salt
  • Everything bagel seasoning, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Grate the zucchinis using a box grater and squeeze out excess moisture using a kitchen towel.
  3. Whisk together the eggs in a large mixing bowl until fluffy, then stir in the grated zucchini.
  4. Mix the almond flour, baking powder, garlic powder, onion powder, and salt in a separate bowl.
  5. Combine the dry ingredients into the wet mixture gradually, stirring gently until combined.
  6. Shape the dough into bagel shapes by rolling into balls and poking a hole in the center.
  7. Sprinkle the tops of the bagels with Everything Bagel seasoning.
  8. Bake for about 20-25 minutes, or until golden brown.
  9. Cool on a wire rack before slicing and serving.

Notes

Make sure to squeeze out as much moisture from the zucchini as possible to prevent soggy bagels.
