Ingredients

  • Bread (Sourdough, Whole Wheat, or Gluten-Free)
  • Fresh Basil
  • Pine Nuts or Walnuts
  • Nutritional Yeast
  • Garlic
  • Olive Oil
  • Vegan Cheese (Optional)
  • Tomato Slices (Optional)
  • Salt and Pepper

Instructions

  1. Make the Pesto
    Combine the basil and nuts in a food processor, pulse until coarsely chopped. Add garlic and pulse again. Gradually pour in olive oil to create a smooth paste, then season with salt, pepper, and nutritional yeast.
  2. Toast the Bread
    Heat a skillet on medium-low, spread pesto on one side of two slices of bread, and add vegan cheese if desired.
  3. Cook it Up
    Place the slices in the skillet, pesto side up, cooking for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes.
  4. Assemble and Serve
    Remove from skillet and let cool. Add tomato slices if using, sprinkle with salt and pepper, and drizzle with more olive oil if desired.
