Ingredients
- Bread (Sourdough, Whole Wheat, or Gluten-Free)
- Fresh Basil
- Pine Nuts or Walnuts
- Nutritional Yeast
- Garlic
- Olive Oil
- Vegan Cheese (Optional)
- Tomato Slices (Optional)
- Salt and Pepper
Instructions
- Make the Pesto
Combine the basil and nuts in a food processor, pulse until coarsely chopped. Add garlic and pulse again. Gradually pour in olive oil to create a smooth paste, then season with salt, pepper, and nutritional yeast. - Toast the Bread
Heat a skillet on medium-low, spread pesto on one side of two slices of bread, and add vegan cheese if desired. - Cook it Up
Place the slices in the skillet, pesto side up, cooking for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes. - Assemble and Serve
Remove from skillet and let cool. Add tomato slices if using, sprinkle with salt and pepper, and drizzle with more olive oil if desired. - Enjoy!
