- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 cup green beans, trimmed
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 tablespoons fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions
- Sauté the onions and garlic in olive oil in a large pot over medium heat for about 3-5 minutes until translucent.
- Add the carrots and celery, cooking for 5-7 minutes.
- Stir in the bell peppers and zucchini, cooking for another 3-5 minutes.
- Pour in the vegetable broth and diced tomatoes, and bring to a gentle boil.
- Season with herbs, salt, and pepper, and simmer for about 20 minutes.
- Finish with green beans and a squeeze of lemon juice in the last 5 minutes of cooking.
- Taste and adjust seasoning before serving.
