Ingredients
Scale
- 4 cups watermelon, cubed
- 2 cups fresh blueberries
- 1/4 cup fresh mint leaves, chopped
- 1 tablespoon lime juice
- 1 tablespoon honey (optional)
Instructions
- Prep the watermelon: Cut the watermelon in half, then into quarters, and chop off the green rind. Cube the flesh into bite-sized pieces.
- Wash the blueberries: Rinse the blueberries gently in cold water and pat them dry with a paper towel.
- Chop the mint: Stack mint leaves, roll tightly, and slice to create ribbons.
- Zesty lime juice: Squeeze out about a tablespoon of juice and watch for seeds.
- Combine the ingredients: In a large bowl, mix watermelon cubes, blueberries, and mint. Drizzle lime juice and honey over the top.
- Taste test: Adjust sweetness to your liking by adding more honey or lime juice.
- Chill: Cover the salad and chill in the refrigerator for about 30 minutes before serving.
Notes
Great to serve in mason jars for picnics. Garnish with mint leaves and consider adding feta cheese for an extra twist.
