Instructions

  1. Prepare your watermelon: Start by cutting a ripe watermelon into chunks. Remove any seeds, and toss them into a blender or food processor.
  2. Blend until smooth: Puree the watermelon until smooth and strain through a mesh sieve if preferred.
  3. Preheat your oven: Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  4. Mix dry ingredients: In a bowl, whisk together the cake flour, baking powder, and salt.
  5. Cream butter and sugar: In a mixing bowl, cream the softened unsalted butter and granulated sugar until fluffy.
  6. Add eggs: Incorporate the eggs one at a time, mixing well.
  7. Stir in watermelon puree: Gradually mix in the watermelon puree and milk until fully combined.
