Description

A refreshing summer snack of watermelon fries paired with a zesty coconut lime dip that’s both vegan and gluten-free.


Ingredients

  • 1 seedless watermelon
  • Juice of 1 lime
  • 1 cup coconut cream
  • 12 tablespoons agave syrup (or maple syrup)
  • 1/4 cup shredded coconut (optional)
  • Pinch of salt

Instructions

  1. Prepare the watermelon by cutting it into wedges about 1/2 inch thick, then slice into ‘fries’ about 3-4 inches long and 1 inch wide.
  2. Make the coconut lime dip by mixing coconut cream, lime juice, agave syrup, and salt in a bowl until well blended.
  3. Chill the dip in the refrigerator for at least 30 minutes to allow flavors to meld.
  4. Plate your watermelon fries on a platter for serving.
  5. Serve the dip in a small bowl placed in the center of the platter with the fries.
