A refreshing summer snack of watermelon fries paired with a zesty coconut lime dip that’s both vegan and gluten-free.
Ingredients

- 1 seedless watermelon
- Juice of 1 lime
- 1 cup coconut cream
- 1–2 tablespoons agave syrup (or maple syrup)
- 1/4 cup shredded coconut (optional)
- Pinch of salt
Instructions
- Prepare the watermelon by cutting it into wedges about 1/2 inch thick, then slice into ‘fries’ about 3-4 inches long and 1 inch wide.
- Make the coconut lime dip by mixing coconut cream, lime juice, agave syrup, and salt in a bowl until well blended.
- Chill the dip in the refrigerator for at least 30 minutes to allow flavors to meld.
- Plate your watermelon fries on a platter for serving.
- Serve the dip in a small bowl placed in the center of the platter with the fries.
Notes
Feel free to customize the dip by adding mint, berries, or a spicy kick with chili powder!
