Instructions

  1. Prepare the Watermelon Rind: Clean the watermelon, cut in half, and scoop out the flesh. Peel off the dark green skin leaving just the white part.
  2. Slice the Rind: Cut into small, bite-sized pieces about 1-inch strips.
  3. Create the Sugar Syrup: Combine 3 cups of water and 2 cups of sugar over medium heat in a pot; stir until dissolved. Add lemon juice and stir.
  4. Simmer the Rind: Add diced watermelon rind to the pot, ensure submerged, and simmer on low for about 90 to 120 minutes, stirring occasionally.
  5. Dry and Cool: Remove rinds with a slotted spoon and place on a baking rack lined with parchment paper to cool completely.
  6. Coat (optional): Toss cooled pieces in cornstarch for extra texture.
  7. Store or Serve: Put your candy in an airtight container; can be stored for up to a week.
