- 2 pie crusts
- 8 strips of bacon
- 2 large onions
- 2 large tomatoes
- 3 large eggs
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the bacon in a skillet over medium heat until crispy, about 7-10 minutes. Save a tablespoon of drippings.
- Caramelize the onions in the skillet over low heat for about 15-20 minutes until golden brown.
- Prepare the filling by combining caramelized onions, chopped tomatoes, crumbled bacon, eggs, cheese, and heavy cream in a bowl. Season with salt and pepper.
- Assemble the pie in a 9-inch pie dish using the pie crust. Pour in the filling and cover with a second crust, sealing the edges and cutting slits on top.
- Bake for 30-35 minutes until golden brown. Cover edges with foil if browning too quickly.
- Cool for about 10 minutes before slicing.
Notes
Serve warm with a light salad or dollop of sour cream. Makes a comforting meal.
