Description

A savory pie filled with crispy bacon, caramelized onions, and juicy tomatoes, all enveloped in a flaky pastry.


Ingredients

  • 2 pie crusts
  • 8 strips of bacon
  • 2 large onions
  • 2 large tomatoes
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a skillet over medium heat until crispy, about 7-10 minutes. Save a tablespoon of drippings.
  3. Caramelize the onions in the skillet over low heat for about 15-20 minutes until golden brown.
  4. Prepare the filling by combining caramelized onions, chopped tomatoes, crumbled bacon, eggs, cheese, and heavy cream in a bowl. Season with salt and pepper.
  5. Assemble the pie in a 9-inch pie dish using the pie crust. Pour in the filling and cover with a second crust, sealing the edges and cutting slits on top.
  6. Bake for 30-35 minutes until golden brown. Cover edges with foil if browning too quickly.
  7. Cool for about 10 minutes before slicing.

Notes

Serve warm with a light salad or dollop of sour cream. Makes a comforting meal.
